Imperial stormtroopers have armor, but which serves no true purpose (it can be pierced by arrows, penetrated by hand blaster, cracked by fall/stones etc); however, we see at least one clone being shot by blaster and surviving (although he still needed medical care), which means that it was still moderately useful, similar to Federation body armor. Little other defensive tech is shown on grand-scale use, althought Vader's armor was capable of partially blocking lightsaber strikes.
On other hand, droidekas use shields, but these were never shown in use by anything other, and can be easily pierced by megajoule-level shots; Gungans used hand-held shields and theatre shield generators during Battle of Naboo (latter ones could be just walked throught). However, all of that, with possible exception of Gungan theatre shields, seems to be able of stopping low-megajoule shots at most.
